Keto Copycat Domino's Bacon & Tomato Specialty Chicken

Ever have the Specialty Chicken from Domino's? Unfortunately it isn't Keto. Luckily it's pretty easy and tasty to make at home!

I used leftover chicken from the night before but you could easily quickly air fry a breast or throw one in an instant pot.

Start by pre-heating the oven to Broil-Low.

Next cook some bacon! I cut up a pound of raw bacon (you won't use the full pound but who doesn't like having extra bacon on hand?) into 1/2" pieces and cooked it in a saucepan, then put it on coffee filters to get the excess fat off, but that is optional of course! (You could also use pre-cooked bacon or bacon bits/pieces)

Next cut up the chicken and place it on parchment paper (not wax paper)

Spread the chicken apart so all the melty goodness will fall between.

Sprinkle 1/4 cup of cheese over the chicken (I prefer Colby Jack because it's creamy when it melts), then 1/2 cup of bacon, then another 1/2 cup of cheese. I like tomatoes on mine (husband does not), so I also cut up 4 grape tomatoes cut into quarters (that way it seems like more!).

Bake about 10 or so minutes, depending on oven, until golden and melty. Throw some Himalayan Pink Salt, dip in some Keto friendly ranch, and ENJOY!

REMEMBER! ALWAYS shred your own cheese! Pre-shredded cheese has starch added to prevent caking, which add extra, unnecessary carbs!
